Sourdough bread has been gaining popularity among home bakers for its unique flavor, chewy texture, and health benefits. If you're new to the world of sourdough, you might be wondering where to start. In this guide, we'll walk you through everything you need to know about making sourdough bread and creating your own sourdough starter.

What is Sourdough?

Sourdough is a type of bread made from natural yeast and bacteria that are captured in a starter. The fermentation process gives sourdough its characteristic tangy flavor and airy texture. Unlike commercial yeast, which is added to dough for a quick rise, sourdough relies on wild yeast and lactic acid bacteria present in the environment.

Creating a Sourdough Starter

To make sourdough bread, you first need to create a sourdough starter. This is a mixture of flour and water that captures wild yeast and bacteria from the environment. Here's a simple recipe to get you started:

  1. Combine equal parts of flour and water in a clean glass jar. I started with 100 grams of whole rye flour and 100ml of room temperature water

  2. Stir well and loosely cover the jar with a cloth or plastic wrap.

  3. Let the mixture sit at room temperature for 24 hours.

  4. Discard half of the starter and feed it with equal parts of flour and water.

  5. Repeat this process daily until your starter is bubbly and active.

  6. For better raising process you can switch the rye flour for all purpose flour at day 3.

  7. For really strong and healthy sourdough starter it takes a week of regular feeding. After the week, you can maintain the sourdough with 50 grams of flour and 50 ml of room temperature water and 1 big tblsp of starter. Mix well and let sit for an hour and put it into fridge where the starter can be till the next feeding (f.e.

Baking Sourdough Bread

Once your sourdough starter is active, you can start baking bread. Here's a basic recipe to try:

  1. In a mixing bowl, combine flour, water, salt, and a portion of your sourdough starter.

  2. Knead the dough until smooth and elastic.

  3. Let the dough rise at room temperature for several hours.

  4. Shape the dough and place it in a preheated Dutch oven.

  5. Bake the bread until golden brown and crusty.
